Lemony Asparagus Pasta

I took a cooking class at ICE a few years ago and fell in love with this lemony pasta recipe. It’s quick, easy, and damn delicious! If you love lemon you will love this refreshing dish. I have to admit I’m not an asparagus fan but this dish is flawless. You must make it! If you like to cook I really suggest taking a few cooking classes. They aren’t just for people who want to learn how to cook, they are for anyone who wants to experience something different. Check out the recipe below!



1 lb of asparagus
3 Tbs olive oil
1 garlic clove peeled and smashed
Zest of 1 lemon (Meyer lemon, if possible)
1/2 lb of spaghetti
2 Tbs unsalted butter
Juice of 1 lemon (Meyer lemon, if possible)
Ground black pepper (to taste)
Salt (to taste)
Grated parmesan cheese (for serving)
4 Tbs of fresh ricotta cheese


1. Bring a large pot of salted water to a boil. Cut off the thick bottom ends of asparagus and discard. Cut top stems and tips into 1/2-inch pieces.
2. Warm oil in large pan over medium heat. Add garlic and cook for 1 minute, until softened on the edges. Add asparagus and season with salt. Sautee and stir, until crisp and tender, about 6-8 minutes. Stir in lemon zest, and remove from heat.
3. Add spaghetti to boiling water and cook until al dente. reserve 1/3 cup pasta water and set aside. Drain spaghetti and add to asparagus along with the butter. Place over medium heat and toss pasta to melt the butter. add half the lemon juice and toss again. taste and add more salt and lemon juice if needed. If the spaghetti gets a bit dry add some pasta water and toss.
4. Plate the pasta for serving (makes 2 servings). Season with pepper, and sprinkle with parmesan. Drop 2 tablespoons of ricotta on top. Enjoy!
